Sometimes, it's nice to take a break from the rapids, sit back, and enjoy the beauty of the Snake River Canyon. This river trip follows the same white water stretch of the Snake River in classic whitewater boats, perfect for beginners, with a stop for a cookout at Mad River's riverside camp in the Snake River Canyon.
Mad River has hired a professional chef to cook meals for our guests on the river. Our Executive Chef Ty Hess prepares a fresh, from scratch and ever changing menu at our riverside dinner site. Chef Ty has over 18 years of professional culinary experience in world class restaurants and is stoked to be on the river cooking outdoors. The cuisine hails from the Low Country of Charleston, S.C., where Ty studied his craft. Our Chef brings a bit of the South to the Mountain West and the Snake River using fresh local ingredients.
As the menu is always changing, we can't give you an exact menu. However, here are a sampling of past menu items to get you excited: Curry Crusted Utah Steelhead Trout, Grilled Bavette Steak with Horseradish Cream, Cornmeal Crusted Catfish with Spicy Red Pepper Remoulade, BBQ Brined Boneless Chicken Thigh, Red Pepper and Cheddar Buttermilk Biscuits, Currant and Farro "Ragout", Honey Glazed Heirloom Carrots, Balsamic Grilled Asparagus, Chef's Southern New Potato Salad, Blanched Green Beans w/ Slow Caramelized Cipollini Onions and Toasted Marcona Almonds, Bay Leaf & Chili Braised Idaho Corn On The Cob w/ Herb Butter,and Mixed Berry Cobbler.
**Due to the outdoor environment of our river kitchen we are unable to guarantee an allergy free meal. If you have food allergies, feel free to bring along your own meal and your guide will carry it, so you can eat with your group.

This trip launches from West Table Boat Ramp in the Snake River Canyon and winds its way south toward Alpine, WY. You'll travel 8 river miles from start to finish.
There are about 8 sets of rapids, ranging from class I and II to class III. Various river features encountered along the way include Lunchcounter and Big Kahuna rapids, Million Dollar Fishing Hole,and Double Draw. You'll pause just after the gauging straights for dinner at Mad River's exclusive riverside camp at Blind Canyon, overlooking the two largest rapids in the canyon.
At the end of your meal, you will hit the water once again to finish out your whitewater experience with the biggest rapids in the canyon up first. Your guides will inform you on the history of the area as well as the local flora and fauna.
The Snake River Canyon is rich in geological history and your guide will point out some of the features that make this canyon unique. You might see river otters, osprey and bald eagles on your trip. The lucky few might even catch a glimpse of a mountain goat, a mule deer, an elk or even a grizzly or black bear.

**Transportation from the Mad River Boat House to the river and back is provided on every Mad River trip.
This trip features our small raft. This raft is an AIRE inflatable, self-bailing, 18'3" raft. This is a 16 man raft. There are 8 paddling positions and 8 non-paddling positions in this raft. All AIRE rafts are made in Meridian, Idaho, USA.
